Shortly before Norman Rockwell passed away in the late 1970s, he sent the editors of the Saturday Evening Posta letter containing his all-time-favorite recipe—oatmeal cookies.
I made these cookies, and they are an oatmeal lace cookie . When I used a medium cookie scoop, 2 inches apart, they spread together into one big cookie! They need to be small scoops, no more than 1 (actual) teaspoon full and placed two inches apart . My standard pan holds 6 cookies. Mine took 6 minutes to cook. The cookies are done when they are a deep golden brown and cooked through, otherwise they will be difficult to remove and too soft to hold their shape. They must cool completely before removing from the pan. Overall, they are a great cookie, light and crisp. Thank you for reproducing this recipe!
